Ingredients:
4 ¼ oz
semisweet chocolate
2 sticks
butter or 1 cup margarine
3 large
eggs
Generous 1
cup of cup superfine sugar
1 tsp
vanilla extract
½ cup
self-rising flour
2 tbsp unsweetened
cocoa
Scant ½ tsp
salt
½ cup
chopped walnuts or pecans (optional)
Directions:
Melt
chocolate and butter in a saucepan, then set aside to cool slightly or until
just firm in the center.
Beat eggs
and sugar until light and fluffy. Add vanilla extract and gradually beat in the
melted mixture.
Sift the
flour, cocoa, and salt over the mixture, then fold it in together with the nuts
(if using).
Turn the
mixture into a greased 7X10 inch bake pan. Bake in a preheated oven 375 F for
20-25 minutes or until just firm in the center.
Let I cool
in the pan for a few minutes, then cut into squares, and turn out onto wire
rack to cool.
